Does Apple Cider Vinegar Need to Be Refrigerated?

No. Apple cider vinegar does not need to be refrigerated, before or after opening.

Here is why, and how to store it properly.

Why ACV is self-preserving

Vinegar is acidic by nature, with a pH of around 2 to 3. At that level of acidity, bacteria and moulds cannot survive. This is the same principle that made vinegar one of the earliest food preservatives — it protects itself.

Raw, unfiltered ACV like Bragg’s is no different. Despite containing the mother (a living culture of proteins, enzymes, and beneficial bacteria), it does not require refrigeration because the acidity of the vinegar itself maintains a stable environment.

How to store it

Keep it in a cool, dark place away from direct sunlight and heat sources. A cupboard or pantry shelf is ideal. The main things that degrade ACV over time are:

Heat: Prolonged exposure to heat above room temperature accelerates evaporation and can affect flavour. Keep it away from the cooker or a sunny windowsill.

Light: UV light degrades the organic compounds in raw ACV. The dark glass bottles used by most quality producers (including Bragg’s) are designed to prevent this. Keep the bottle away from direct light regardless.

Contamination: Always use a clean spoon or pour directly. Introducing bacteria or food particles into the bottle can cause off flavours over time.

What about the mother?

The mother will settle at the bottom of the bottle between uses. This is normal and not a sign that anything has gone wrong. Shake the bottle before each use to redistribute it.

Refrigeration will not harm the mother, but it slows its activity slightly and makes the vinegar thicker and harder to pour. There is no benefit to keeping it cold.

The short version

Store it in a cupboard, away from heat and light. Shake before use. Do not refrigerate unless you prefer it cold. It will last as long as you need it to.
